As an overseas Filipino worker I always look for a recipe that is easy to cook and don't require too much time, and one of the important things I consider is the ingredients where I can easily buy from the market. Except for the Pork Ribs which is fortunately available in Dubai (Spinneys Market). If Pork Ribs is not available in your country (most of the countries Middle East), then you can use Beef Ribs instead. Although, Beef require longer time to tenderize. <br />

If you follow the following cooking instruction, even a newbie can cook this easily. <br />

<b>These are the ingredients that I've used for this dish:</b></div>

1 medium size onion<br />
Water<br />
Fish Sauce ( I used 2 tbsps for this recipe)<br />

<b>3</b>. Check the tomatoes if they are completely peeled, add salt and pepper<br />

If you are a Filipino or a Filipino food lover then you know what's adobo. This time, let me tell you how you can cook <b>Adobong Pusit with Coconut Cream </b>the way I've prepared it.<br />

Half Kilo of Squid<br />
1 medium size onion<br />
About 6 cloves of garlic (I love garlic)<br />
Vinegar (This time I used Apple Cider Vinegar)<br />
Cooking Oil (about 2 tbsps)<br />
Soy Sauce<br />
Salt and Pepper<br />
2 medium Chopped Tomatoes (this is an optional but this time I wanted to taste a bit of tomato flavor)<br />
Extra Thick Coconut Cream<br />
2 not so hot Chillis<br />
<br />
<b>How I cooked it:</b><br />
<br />
<b>1</b>. I saute'ed the garlic and onions for at least a minute or before it turns brown. Then, I added the tomatoes.<br />
<b>2</b>. Before I added the squid, I made sure that the tomatoes are well cooked to get that juice out of it.<br />
<b>3</b>. I saute'ed the squid about 1 minute since I still have to cook it further (Remember when cooking squid you don't overcook it or the squid will be very chewy)<br />
<b>4</b>. Then I added soy sauce then let it simmer for about 2 minutes before I added the vinegar. For some reason I find it better tasting when I use that method instead of adding the soy sauce and vinegar at the same time. I guess it is because the acid that vinegar contains.<br />
<b>5</b>. Try your squid if it's tender before you pour the cream.<br />
<b>6</b>. Then finally I poured the coconut cream and the chillis and let it simmer for couple of minutes. <br />
<br />
<b>Voila! Adobong Pusit in Coconut cream is ready to serve.</b><br />

This is the shortcut way to prepare Ginisang Burong Kanin with Hipon (Sauteed Fermented Rice with Shrimps). For some, this dish sounds disgusting because of the smell; but for most of the Kapampangans (People in Pampanga, Philippines) this is one of the famous dishes to ever served on the table. It is usually served with steamed vegetables such as eggplant, bitter melon, okra, string beans and the most famous one is Mustard Greens or Mustasa in Tagalog. When this dish is served, expect to serve more steamed rice on the table.<br />

<a name='more'></a>So, what prompted me to cook this aside from the fact that I was salivating about it? I was having a grocery and saw Claude Tayag's very own Burong Hipon in a bottle. Hmmm, he actually selling his food in a bottle which I find it brilliant since not everyone can afford to eat at his restaurant. I couldn't either. <br />
<br />
Anyway, to cut this article short, here's the recipe and how I cooked it. My own way.<br />
<br />
- 1 cloves of garlic (I love garlic so I put more)<br />
- 1 onion which I chopped<br />
- 4 pieces of tomatoes, chopped it as well<br />
- cooking oil for the saute'<br />
- 2 tbsps of fish sauce or Patis<br />
- salt and pepper to taste<br />

How I cooked it?<br />
First, I heat the pan, poured the cooking oil and added the garlic first and when almost brown I added the chopped onions. (for some, they add the onions as soon as they started sauteing the garlic. But I love the taste of garlic so I wanted it almost brown).<br />
<br />
After the onions, I added the chopped tomatoes and kept sauteing it until a little bit mushy and then added the fish sauce. <br />
<br />
Then, add the bottled fermented Burong Hipon and keep sauteing for about 2 or 3 minutes.<br />
<br />
Then finish it off with the salt and pepper. Some add Vetsin or MSG but I don't usually practice that method of cooking for health reasons.<br />
<br />
There you go. A simple way of cooking Burong Hipon.<br />

would like to eat Filipino Food that I can’t eat while I’m working
overseas.<span style="mso-spacerun: yes;"> </span>And when I’m in the Philippines
I rarely cook and I want to eat what my Mom cook coz’ I miss the taste. <span style="mso-spacerun: yes;"> </span>It’s like being a child again.<span style="mso-spacerun: yes;"> </span>One time she cooked Sautéed Bean Sprouts or
what call Toge in the Philippines.<span style="mso-spacerun: yes;"> </span>Oh
boy, what a treat.<span style="mso-spacerun: yes;"> </span><span style="mso-spacerun: yes;"> </span><span style="mso-spacerun: yes;"> </span><br />

Anyway, here is how my Mom cooked Sautéed Bean Sprouts with
Pork.</div>

2 pieces of
carrots cut in strips</div>

Fish sauce
(measurement according to your taste)</div>

1 whole big
onion</div>

1 small
packet of Ginisa Mix (Optional, replace it with salt and pepper)</div>

garlic, chopped</div>

½ kilo of
Bean Sprouts</div>

Olive oil
for sautéing </div>

1.<span style="mso-spacerun: yes;"> </span>On a pan, pour few tablespoons of olive oil
and when it’s hot enough stir fry the garlic then add the onions.<span style="mso-spacerun: yes;"> </span>Like me, my Mom prefer not to overcook the
onions because she knew I like it little bit crunchy </div>
<div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">
2.<span style="mso-spacerun: yes;"> </span>The next step is to add the sliced Pork Belly,
sauté it with the garlic and onions then add the ginisa mix.</div>
<div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">
3.<span style="mso-spacerun: yes;"> </span>Before you add the veggies make sure your
pork is cooked by getting one piece and taste it, which is the only way you’ll
know if it’s cooked or not. </div>

4.<span style="mso-spacerun: yes;"> </span>When pork is cooked, add the carrots and string
beans.<span style="mso-spacerun: yes;"> </span>After few minutes of stir frying
it, add the bean sprouts and cook it for few minutes. I prefer that my bean
sprouts is half cooked.</div>

As an OFW, I think of recipes that are easy to cook after a
hard day’s work.<span style="mso-spacerun: yes;"> </span>And one of those easy
to cook recipes is Sautéed Corned Beef and this time I thought of garnishing it
with green onion leaves which gives a different flavor to it.<span style="mso-spacerun: yes;"> </span>I always like to use onion leaves as an added
veggie when I cook <a href="http://pinoyfoodrecipe.blogspot.de/2007/10/chicken-tinola.html" target="_blank">Tinolang Manok</a>, there’s something with the taste that I
really like.</div>

Anyway, here’s how I cooked Sautéed Corned Beef.</div>

ingredients I’ve used:</b><br />

2 Cans of
Purefoods Corned Beef 300 grams per can (or any brand)</div>
<div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">
1 whole big
onion (the more the better)</div>
<div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">
Few pieces
of garlic, crushed and chopped</div>
<div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">
Few
tablespoons of olive oil or any cooking oil</div>
<div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">
I small
packet of Ginisa Mix powder (optional)</div>

Chopped green
chili (medium spicy and this is optional)</div>

Few stems of
onion leaves</div>

A pinch of
black ground pepper</div>

<b style="mso-bidi-font-weight: normal;">How I cooked it:</b></div>
<div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">
1.<span style="mso-spacerun: yes;"> </span>On a pan, pour few tablespoons of olive oil
and when it’s hot enough stir fry the garlic then add the onions.<span style="mso-spacerun: yes;"> </span>I prefer not to overcook the onions because I
like it little bit crunchy (if that is the right term to use).</div>
<div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">
2.<span style="mso-spacerun: yes;"> </span>The next step is to add the corned beef,
sauté it with the garlic and onions then add pepper and the ginisa mix.<span style="mso-spacerun: yes;"> </span>(Ginisa Mix is a powder that became famous in
the Philippines and now being exported all over the world for the OFW to
use.<span style="mso-spacerun: yes;"> </span>It adds taste to a dish because one
of the ingredients is a Mono Sodium Glutamate or known as MSG or Vetsin).</div>

3.<span style="mso-spacerun: yes;"> </span>It only takes minutes to cook the corned beef
and it’s already pre-cooked. </div>

4.<span style="mso-spacerun: yes;"> </span>Before you turned off the gas or electric
stove, add the onion leaves.</div>

I’ve cooked this dish few days ago for my colleagues and
friends after our conversation about missing the taste of Filipino food,
especially Sinigang. <span style="mso-spacerun: yes;"> </span>We have a dining
facility here that serves American and different kinds of food but not Filipino
food.<span style="mso-spacerun: yes;"> </span>Even though, it is difficult to
get ingredients considering the location where we are (will not be disclosed
here due to security reasons), I found a way to get some ingredients and cook
it.<span style="mso-spacerun: yes;"> </span></div>

Anyway, here is how I cooked Sinigang na Manok.</div>

ingredients I’ve used:</b><br />

chicken cut in portion</div>

2 packets of
Knorr Sinigang Mix (since there’s no fresh tamarind to use)</div>

¼ kilo of
strings beans</div>
<div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">
½ kilo of
eggplant</div>

5 pcs of
green chili (not spicy)</div>

Fish sauce
(measurement according to your taste)</div>

1 ginger
medium size or according to your taste</div>

Sliced 5

half liter of mineral water</div>

<b>How I cooked
it:</b></div>

1.<span style="mso-spacerun: yes;"> </span>I boiled mineral water and when it was
boiling poured the cut chicken, onions, ginger, tomatoes.</div>
<div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">
2.<span style="mso-spacerun: yes;"> </span>When the chicken was tender, I poured 1
packet of the Sinigang mix and tasted.<span style="mso-spacerun: yes;">
</span>It tasted less sour so I poured another one until I was satisfied with
the sourness of the soup.<span style="mso-spacerun: yes;"> </span>The technique
of getting the taste you would like when cooking is don’t put too much of sauces,
salt, etc.<span style="mso-spacerun: yes;"> </span>You can adjust the taste
easily if you add bit by bit until you like the taste.</div>

3.<span style="mso-spacerun: yes;"> </span>Then after the mix, I added the fish sauce to
balance the taste.</div>

4.<span style="mso-spacerun: yes;"> </span>When it was boiling and the chicken was
tender, I added the vegies.<span style="mso-spacerun: yes;"> </span>It is up to
the cook if he/she wants the veggies to be half cooked or fully cooked.<span style="mso-spacerun: yes;"> </span>I prefer half cooked.</div>

Probably most of my visitors here knew that Sisig is one of the famous dishes in the Philippines, especially in Pampanga where it originally came from. You can do <a href="http://pinoyfoodrecipe.blogspot.com/2007/10/sizzling-sisig-pork.html" target="_blank">Pork</a>, Beef, <a href="http://pinoyfoodrecipe.blogspot.com/2008/06/sizzling-squid-sisig.html" target="_blank">Squid</a>, <a href="http://pinoyfoodrecipe.blogspot.com/2009/11/sisig-bangusmilkfish.html" target="_blank">Milk Fish</a> and Chicken Sisig which is the recipe for today. Sisig can be served as one of the main dish or it can be served as a "Pulutan" or what you call finger food in English. It is best served on a sizzling plate </div><div><br />
<strong><a name='more'></a>Ingredients:</strong></div><div>10 pcs of whole Thighs and Legs <br />
3 big onions <br />
5 pcs of green chilis (mild) <br />
100 grams of butter <br />
Salt and pepper <br />
Soy sauce <br />
Lemon juice <br />
Vinegar<br />

<strong>Cooking Procedure:</strong></div><div>- Debone the chicken and chop into small pieces <br />
- Chop the onions and green chilis <br />
- Heat up the pan and sauté the onion until it's half cooked then set aside <br />
- Using the same pan, fry the chopped chicken until it’s tender but if it has broth throw that. Chicken needs to be cooked until it’s a little bit brown. <br />
- When the chicken is cooked, pour the cooked onions. <br />
- Pour salt, pepper, lemon juice, soy sauce and vinegar. The measurement depends on your taste buds. The technique to not overdo it is to pour little by little until you get your desired taste. <br />
- Lastly pour the chopped chilis.<br />

Note that if you have chicken liver (with this recipe there's none), the taste will be better. In case you have Chicken Liver, grill the liver first before you chop it and mix it with the Chicken Sisig. </div><br />

<strong>Patatim’s</strong> main ingredients are similar to <a href="http://pinoyfoodrecipe.blogspot.com/2007/09/adobong-baboy-pork.html">Adobo</a> except that some includes Banana blossoms. To be honest, I don’t know the difference between having it and not having it. Since that ingredient is rare to find, I cooked it without it. Others use Pork Braised Legs and some are hind legs. For this particular moment, I used hind legs. <br />
<p><strong><a name='more'></a>Ingredients:</strong><br />
<p>3/4 cup soy sauce <br />
1/4 cup of vinegar <br />
2 Pork bouillon cubes <br />
2 pcs small pork hind legs, cut into 1 1/2 inch thick<br />
1 tbsp cornstarch</div><div>Fish sauce</div><div>5 pcs bay leaves</div><div>1 tsp ground pepper (you can also use peppercorn)</div><div>1 tbsp vegetable oil</div><div>1 whole garlic, minced</div><div>1 whole onion, minced </div><div><p><strong>Cooking procedure:</strong></div><div>1. Boil the pork hind legs, when almost tender set aside.</div><div>2. In a casserole, sauté minced garlic and onions with the oil.</div><div>3. Add fish sauce, then pork leg and the rest of the ingredients.</div><div>4. Bring to a boil and slowly simmer for half an hour or until tender. </div><div><p>Voila! Majority of the vegetables in the Philippines can be used as an ingredient to a sumptuous meal with a coconut milk. You can also cook Pork, Chicken and seafood’s. This time, let me show you how to cook Ginataang Sitaw. If you search online, there are lots of English translations of "Sitaw", some calls it Green Beans, Long Green Beans, Long Beans, etc...</div><div closure_uid_mis0kw="187"><br />
</div><strong><a name='more'></a><div closure_uid_mis0kw="187">Ingredients:</div></strong></div>- 1/4 Kilo of Sitaw (cut at least 2 inches in length)<br />
- 1/2 Kilo of Pork Belly or Liempo (cut into cubes)<br />
- 1/4 Kilo of Shrimps (Shelled)<br />
- Onions<br />
- Garlic <br />
- Green Chili (Chopped)<br />
- Cooking Oil<br />
- Ginger<br />
- Fish Sauce, Salt and Pepper<br />
- Shrimp Paste<br />
- Coconut Milk (Powdered or Canned)<br />
- 1 cup of water<br />

<div closure_uid_olqiwf="229"><strong>Cooking Procedure:</strong></div>- In a pan, pour the cooking oil, sauté' garlic and onions.<br />
- Add the ginger. After few minutes of sautéing, pour fish sauce. There's no exact measurement of the fish sauce or salt and pepper, it depends on how you like the taste.<br />
- After pouring the fish sauce, add shrimp paste until it's cooked, unless the shrimp paste was already cooked or sautéed'. <br />
- Now you can add the pork and cook it until its tender.<br />
- When pork is tender enough, add shrimps and the chopped green chili’s.<br />
- Sauté it for a minute and pour the mixture of one cup of water and the powdered coconut milk or in can.<br />
- Once it boiled, pour the long beans or sitaw and cook it until it's half cooked. Or you can cook it very well.<br />
<br />
Remember, this recipe is just a guideline to cook but the outcome of your cooking will always be your decision.<br />

3. Pour in the vinegar and stir well, add the sugar and let it simmer for few minutes until it's cooked. <br />

One of my favorite seashells are clams, make a soup and the gingery taste of it taste so good. But before you can enjoy eating clams, you must thoroughly clean it first to remove the grain of sand.

<span style="font-weight: bold;">Here's how to clean the clams:</span>
1. Tap clams on the side to see if they are still alive. Clams that do not close when tapped should be thrown away.
2. Place the clams in water with salt (about 1/2 cup per gallon) for 2 to 3 hours in order for them to "vomit" the grains of sand and grit that still be found inside.
3. Thoroughly wash the clams prior to cooking. If necessary, scrub them in order to loosen barnacles on the shells.
4. When cooked, discard the clams that remain closed. <p>2 kilos of Beef bulalo (Bone marrow)
</p><p>1/2 kilo of grated gabi
</p><p>1/2 kilo of chinese pechay

</p><p>1/4 kilo of shredded labong
</p><p>1/2 kilo of corn on the cob but by 1 1/2 inches

</p><p>1. Boil bulalo (bone marrow) once, remove scum.
</p><p>2. Boil again and add all the above ingredients except the chinese pechay.

1 kg. of goats meat

1/2 bottle of green olives

1/2 can of green peas

2 cans of liver spread

1 can of tomato sauce

1/2 cup of bread crumbs

1 tbsp. of Worcestershire sauce
<p>
1 tbsp. of Tabasco sauce

2 tbsp. of olive oil
<p>
2 tbsp. of Achuete coloring

1 bay leaf
<p>
4 potatoes cut in cubes
<p>
1 carrot medium sized but in cubes
<p>
2 sweet red pepper
<p>
half tsp. of minced garlic

<p><span style="font-weight: bold;">Cooking procedure:</span>

1. Marinate goat's meat overnight in 1 cup vinegar seasoned with salt, pepper and minced garlic.
<p>
2. Cut goat's meat to 1 inch cubes and fry in deep hot fat until brown and tender. Set aside.
<p>
3. Add tomato sauce, then the meat, bay leaf, achuete coloring, liver spread and 1 cup of boiling water. Let it simmer until tender.
<p>
4. Add the remaining ingredients and serve after simmering for five minutes.
<p>

Leche Flan is one of my favorite dessert, and here is the recipe for you to try it.

* 10 egg yolks<br />
* 1 can (390g) condensed milk<br />
* 1 can (390g) evaporated milk<br />
* 1 teaspoon of vanilla extract<br />

The preparation time for this dessert is 30 minutes and estimated cooking time is an hour.
<span style="font-weight: bold;"> </span><br />
<br />
<span style="font-weight: bold;">Cooking procedure:</span><br />
1. Get a saucepan and combine the water & sugar, bring to a boil for a few minutes until the sugar is caramelized.<br />
2. Get the aluminum moulds and pour the caramelized sugar, spread the caramel on the bottom of the moulds.
3. Blend well the evaporated milk, condensed milk, egg yolks and vanilla.<br />
4. Pour the mixture on top of the caramel on the aluminum moulds, about 1 to 1 1/4 inch thick.<br />
5. Cover moulds individually with aluminum foil.<br />
6. Steam for about 20 minutes or bake for about 45 minutes. Before baking the Flan, place the moulds on a larger baking pan half filled with very hot water, pre-heat oven to about 370 degrees before baking.<br />
7. <span class="fullpost"><b>Cooking Procedure:</b><br />

<span class="fullpost">1. Mix flour, egg, salt and water in a bowl then add the shredded papaya and mix it well.<br />

<span class="fullpost">2. Get your deep frying pan and pour the cooking oil. Let it heat up well. Get a small saucer and place about two to three spoonful of your papaya and flour mixture. Flatten the mixture with the back of a spoon to have a nice round shape of about an inch thickness. Decorate the top with a prawn, from the saucer slide the mixture gently on your hot oil and cook both sides until golden brown. Be careful, don't splatter it.<br />

Now to prepare a vinegar dip:</b><br />
- Get a cup of Vinegar (any kind but preferably sukang puti or according to your likeness), chopped some chilis, ground garlic, salt and pepper.<br />
